Flourless Banana-Almond Butter Pancakes
My daughter, Abbey, is always looking for gluten free options. (What is it with these Millennials and gluten-free stuff?) Anyway Abbey found this recipe for Banana-Almond Butter pancakes (Of course we tweaked it), and since then it has been our thing. To make matters even better these delicious pancakes don't have grains at all! Here's what you'll need:
3 bananas
3 Tablespoons of almond butter (room temperature)
3 eggs
1/4 teaspoon of cinnamon
Put a frying pan on medium-low heat. Next using a fork (or my favorite tool: a beater from your electric mixer) thoroughly mash bananas in a mixing bowl. Then add almond butter, eggs and cinnamon and mix everything together well.
Next you thoroughly spray the pan with cooking oil. You then pour 1/4 cup of the mixture into the pan for each pancake. Then place a lid on pan (around 30 seconds) to help the pancakes cook through. You then very carefully flip them. If they don't look great, don't worry. They will be yummy anyway. Each time you do another round of pancakes, spray cooking oil on the pan. (Serves 3 to 4)
Serve hot with maple syrup and butter. (I like them with just butter!)
