I’m excited to share a couple of recipes that we are wild about as a family. You may have noticed that my photos look extra-professional these days. My younger adult daughter, Abbey, has used this time to immerse herself into the world of food photography (see her work @The.SundaySpoon). I make up or tweak recipes and she makes them look like they belong in Bon Appetit! Not a bad deal. The recipe that I’m most excited about lately is our 4-ingredient Cashew Dip. I was introduced to a delicious Cashew Dip by Jenni and Brian Rouanzoin who are great cooks! Of course, I tweaked their recipe and made it 4 ingredients. Now we can’t stop making and eating this super easy to prepare dip and have come up with a couple of fun variations! Here’s what you’ll need:
Classic Cashew Dip
1 & 1/2 cups of raw or roasted cashews
1/4 cup of fresh lemon juice
1 cup of water
1 teaspoon + 1 teaspoon of Everything Bagel Seasoning (We love Trader Joe’s)
1 teaspoon of garlic salt (preferably the chunky kind -unground)
1/2 teaspoon of red pepper flakes
Put all the ingredients (withholding one teaspoon of the Everything Bagel seasoning) into a bullet or blender and blend until completely smooth. Spoon the dip into a bowl and stir in the 2nd teaspoon of Everything seasoning. Chill in frig. for at least 20 min. Just before serving, sprinkle the top with a bit more seasoning. Serve with crackers or chips.
Cashew Dip with a Kick
I hit upon this recipe almost by accident. My family requested cashew dip but all we had was spicy Honey Sriracha Cashews. They made a great dip with a serious kick! Here’s what you’ll need:
1 &1/2 cups of Honey or Maple Sriracha Cashews. (You can find these on Amazon or at one of the Mother’s Markets in southern California.) Another option is buying Sriracha Cashews and adding 1 teaspoon of honey or maple syrup.
1 cup of water
1/4 cup of fresh squeezed lemon juice
1 teaspoon of garlic salt ( preferably the chunky kind-unground)
*Same directions as above!

What I’ve Been Up To Lately
The reason it has been a few months since I’ve posted is that I have been using my time to develop my professional website. It’s called Attacking Depression and Anxiety from ALL Angles (attackingdepressionandanxiety.com) The first talk is mostly about my own journey through deep depression and the varied things that have helped me and many others.
